Technology + Operations

We turn complex operations into simple decisions.

We're a local group with a global backbone. We help real businesses with real technology — in and from Los Cabos. This is what we've built.

Live Demos

What we discovered by actually measuring.

Two findings that change how a restaurant runs. These aren't theories — they're real measurements.

1. Do you know how often your servers visit each table?

1

In most restaurants, if you ask the owner they'll say "often, of course." The reality: we measured 12,000 table visits over 3 weeks. The average was every 28 minutes. But not all visits are equal.

2

Tables visited within less than 22 minutes of being seated generated 44% higher average tickets. The upsell — dessert, coffee, digestif — almost always happens on the second visit, not the first. And if that second visit takes more than 30 minutes, there's no dessert.

3

Result: getting the team to make that second visit on time — around minute 22 — is worth $18 more per table. At a 40-table-per-night place, that's $260,000 extra per year. Without selling more dishes. Just timing.

Average ticket by visit number

$320 Visit 1 min 1–8 ▲ upsell $460 Visit 2 min 18–25 $340 Visit 3+ min 30+

2. If every server sold like your best server, you'd make $38K more per month

1

At the bar we reviewed, Caro averaged $480 per ticket. Dani averaged $330. Same shift, same tables, same menu. The difference: Caro suggests. Dani takes the order.

2

We measured upsell by server. Caro converts 3 out of 10 tables into an extra dessert or coffee. Dani converts 1 out of 10. It's not a lack of effort — Dani didn't even know that was being measured. When he saw it, he asked for training.

3

Dani trained with Caro for two weeks. His ticket went from $330 to $410. On a team of 5, closing that gap is worth $38,000 a month. Without hiring anyone new.

This isn't a pitch. It's what we measure and what works today with the businesses we work with in Cabo.

How we work with you

Several ways to start. All low-risk.

Most consultants drop a deck and disappear. We stay until the results show up in your numbers — and that's when we get paid.

TrainingFree

Learn to read your own business.

Nobody ever taught you how to read your numbers — so it's easy for things to slip by. Hands-on workshops for you and your team.

Fast diagnostic48 hours

Where your leaks and your levers are.

You don't know how much you're losing until someone measures it. In as little as 48 hours, we put a number on the trapped cash.

Pay for resultsZero risk

We win when you win.

We charge only on measured incremental profit in the focus area. If it doesn't show up in your numbers, we don't get paid.

E-invoicingCFDI

Legal CFDI, without fighting the portal.

Guests ask for a factura and the shift stalls. We stamp the official CFDI — PDF and XML — from WhatsApp or a simple portal, using your own CSD. Legal, on time, without pulling the floor off the table.

Free for selected clients — first we make sure we're a good match.

Under the hood

Want to see how? This is what we measure.

The engine behind every path. You don't need to understand it for it to work — but here it is, no smoke and mirrors: two fronts, the same two that drive your profit.

Front 1 · Revenue

Every shift, every employee, every hour.

Average ticket, how long a check stays open, checks per hour — by employee, by hour, by day. Weekly, or live.

  • Operational execution, shift by shift.
  • Staffing that fits — never over, never under.
  • Who sells, and who needs coaching.
  • Where the upsell is being lost.

Front 2 · Costs

From a simple count to your true cost.

  1. 01Count what matters, often.ABC teaser: not everything gets counted the same — the few products worth the most get counted the most.
  2. 02Calculate your inventory turns.
  3. 03And from there, your true unit cost, step by step.

Then the fixed costs: power, water, rent.

The Vault

There's a lot more inside.

Before we start

We don't work with everyone. And we tell you why.

What we offer is free for selected clients. Not for exclusivity's sake — but because we can only help you if we can run a real analysis. We'd rather be honest from the start.

What we need from you

  • 100% of your order tickets, exported straight from your system — plus any manual adjustments.
  • Something to reconcile against — ideally one or two months tied out to bank and/or card statements. The more complete, the sharper the analysis.
  • One month of supplier invoices for what you sell — your inventory purchases.

When it might be too soon

  • Very early-stage businesses without a stable operation yet.
  • Businesses mid-transition, with too much variability to measure well.

Without that data we can't do our job properly — and we won't pretend we can.

Start today

Score your operation in two minutes.

Answer honestly. At the end we'll tell you where you're leaving money on the table — and whether you qualify for the next level. We work closely with a few at a time, so first we get to know each other.
